Can I make a bootable Big Sur installer for Apple Silicon with macOS already configured and my apps installed?

I am trying to avoid having to use JAMF style deployment for a relatively small job. I used to do this all the time with Intel and every OSX/macOS ≤ 10.14 but things have changed so much & I don’t seem to be using the right search terms to bring up what I’m looking for.

Thanks for any guidance or pointing in the right direction.
