I really like this feature of lion and consider it a major improvement but I have to manually click and change each folder as I go. Is there a way to make every folder in finder display sorted by " kind" by default?

Navigate to your Documents folder in Finder. Right click anywhere on the white space and select Show View Options. At the top of the window that should have appeared, select Sort By: Kind and then click the button Use as Defaults at the bottom of the window. Voila! All folders in Finder should now sort by kind.
 
Most folders will, but anything you copy back on from a backup or install has the chance to have .DS_Store files that will not be changed to the defaults until you make them change.

Thankfully it is easy enough to do that - in the same View Options pane, hold option and Use as Defaults changes to Restore to Defaults, and since Tiger this has even included sorting preferences! If it is detecting incorrectly, you may have to make some change to the rogue settings before that restore button becomes enabled.

Unfortunately this still doesn't work to set a global preference for window size, one of my favourite things that Windows 7 does better.

you can do that by using the option view in the finder windows. right click and select option view than set it as default for all the finder windows.

Great info. I was looking for something like this for a long time, since I'm new to Mac.

Thanks! This makes everything so easy. I have lots of folders everywhere and hated to sort them out manually.
 
That still does not change them all. Also when you save as Sort by Kind -> Name there is no "Use As Defaults" option.
