So I love DropBox. It allows me to have all of my MBP files on my iPhone & iPad.

MY recent concern has been that anything that is downloaded when i'm on my Mac, it goes either on my desktop or downloads folder...and for the most part, eventually goes into my DropBox folder.

I understand the negatives about making my OSX desktop into my dropbox (such as having a huge movie file on my desktop...) but nevertheless am curious as to how this would be possible; with the theory being that my overall MBP would be in DropBox; hence my overall MBP would be in the cloud...and accessible to my iOS devices.

No, your Dropbox folder must be called 'Dropbox', hence you can't use the contents of your desktop.
 
Actually you sort of can... Create a symlink to your desktop from inside the Dropbox folder on each of your computers and it will sync your desktop across all of them.

In terminal:

cd Dropbox/
ln -s ~/Desktop

Or better yet, make they Dropbox directory the symlink, remove the current directory then:

ln ~/Desktop Dropbox

You might want to remove all items on your desktop or stop Dropbox on all your machines until you are done creating the symlinks on all your machines.
