I use AirServer on my Mac Mini so that I can mirror AirPlay my iPad to it. Is there a similar way I can mirror my Macbook Air to my Mac Mini like we saw Mountain Lion would allow for Apple TV users?

Should be able to do the same thing since AirServer makes all the client machines (Macbook Air) think its seeing an AppleTV.
 
But how do I activate AirPlay mirroring on the Macbook then, so that I can mirror it to my Mac Mini using AirServer?

You should be able to just click the AirPlay icon on the menu bar.

The Macbook would need to be running Mountain Lion, so if you're not a developer running ML you'll not be able to to this under ML comes out (as far as I know).

Im only on Lion. However I found a program called Parrot that turns it into an AirPlay device ;)
