We plug cable from the wall into our router, can I do this with the time capsule (extreme) / air port extreme base station?

your router is probably a modem as well. the Airport Extreme is just a router with wireless. leave the modem/router plugged into the wall and run an ethernet cable to the WAN port (very left) on the Airport Extreme.
 
k, can I also turn off the wireless from the router/modem that's plugged into the wall?

even if I don't upgrade, at the moment, we have two wireless internet routers right next to each other...

yes you can disable wireless on the cable modem if you're using the Airport.

Also, you'll need to disable DHCP on either the cable modem or the Airport.
 
Why can't I have DHCP on both, is it bad to have them both wireless, and both DHCP?

I'm a little confused about it.

DHCP automatically assigns you an internal IP address to surf the internets. you only need one DHCP service having two may cause conflicts. so pretty much youre just disabling the router part of your modem and just using the Extreme's.
