I ported mine at the Apple store on launch day, and I suggest you do the same, it was very easy, but make sure you know all the info about your account, name, acct #, password etc..., and if you're not the authorized user make sure to bring whoever is the authorized user in your family.

I did mine at the Apple store so I don't know if it can be done from iTunes? you can try, if it doesn't work than just go to the Apple or AT&T store.

Okay thanks, I'll probably do it after I get back from Texas. Just use the assigned number than change it when I get back. Can I do that?

Yes, if you do it in the first 30 days of activating your account.

You can also do it over the phone by calling AT&T customer service.
