So, my iPhone got stolen last week. It was a jailbroken 3Gs with 3.1.2. I bought a replacement used Iphone off Ebay and received it today. This new phone has 3.1.2 firmware but is not jailbroken.

So my question is how can I get all of my apps / data to my new phone? Should I jailbreak first? Do I just sync then? Also, the name of the phone is name of the guy I bought the phone from, how do I change that?

Redsn0w to JB. Then sync stuff back in iTunes. Once you plug the phone into Tunes, you can easily change name by clicking on it in left column.
 
I used Blackrain to jailbreak my original phone, does that matter? Or is it better to use Redsn0w?
