Since iOS 11 and MacOS High Sierra I encountered some glitches with Apple Notes which make me wonder if I can still trust this app. For one, the search results are always sorted in some random order which makes finding back notes very awkward.
Second, today I noticed a difference between iOS Notes and MacOS Notes: not all notes were synced. And they wouldn't sync either when I edited them (in the hope of forcing a sync). In the end I disabled iCloud syncing on my Mac with deletion of all my notes on the Mac. When I enabled iCloud sync all my notes were back on my Mac, except for one which synced as I edited it on my iPad (at least I hope there is only one missing: difficult to see as I have over 900 notes).

With iOS 10 and before and MacOS Sierra and earlier versions, I never had any problems with Apple Notes.

Anyone else have similar experiences?

Is there a way to see if some notes are missing? (on iOS there is a note count per folder, but alas not on MacOS).
 
I don't know if I can help with your specific issues. But, I have no problems syncing. Whole family uses it. I haven't tried to putu them in any order. But, I know with ios 11 you can pin important Notes to top of screen for easy finding.
