Under More Info I have other updates, if I click update now, will it just install them? I don't want Catalina as it doesn't support 32bit.

There is no option to deselect it, it doesn't show on the list, it's separate. Under Software update it has "upgrade now". then other updates are available there if "more info" and there are three updates there. I'm just worried accept that, it will update to Catalina.

Install now in your left screenshot will update everything in Mojave. The upgrade now button will install Catalina. so select install now from the more info window and youll stay on Mojave’s

Is Catalina taking up room on my SSD? Cause if so how d you delete it?
 
If you have "Download new updates when available" checked in your Software Update Preference/Advanced Pane. You will have the Catalina Updater files already downloaded in:
"/Volumes/Macintosh HD/Library/Updates" folder.

I suggest that you first go into the software update dialog shown in reply 6 above, and UNCHECK EVERYTHING.
You DO NOT WANT "automatic updates" going on behind your back.
At least I don't.
I don't want ANYTHING "updated automatically" before I know what's going to happen.

Having said that, I suggest that you then go to the dialog shown in your reply 3 above, and UNCHECK everything first.
THEN... check and update ONE ITEM AT A TIME.
Let it install, then check it -- if it looks good, check the next one and install that.

If you "update all", and something goes wrong, it may be difficult to ascertain WHICH update is causing the trouble...

Aside:
As is probably obvious, I don't care all that much about "updates" to "the latest and greatest"...

I would suggest to start considering upgrading to Mac OS Catalina because time will come that you will really need to upgrade and you don't have a choice so it would be best if you do it know. Aside from that upgrading to Catalina will reduce the posibilities of malware infection due to vulnerabilities present on the older version of mac OS. :)
