I'm currently running iOS 15.6.1 and want to update to iOS 15.7. I prefer to do iPhone software updates with my Mac, but when I plug my iPhone into my Mac in order to update, the only available update my Mac shows is iOS 16.0. Is iOS 15.7 OTA only?

That's how I update as well. I notice this also, new release shows on phone immediately, than oddly requires a few goes to make its appearance in Finder. It will eventually appear.
Edit: missed the bit that iOS 16 does appear for you instead.
Same, only showing 16.0 on my itunes, maybe only OTA available for 15.7
Same for me as well. Bummer. I'll still keep trying today and report back. I'm still running 15.6.1 on my iPhone 13 Mini and was hoping to stay on 15.7 until 16.1 or so comes out.
