Can I use a different start-up disk for Windows

I'm thinking about installing Vista or the Windows 7 beta on my MacPro. I have two internal drives installed: the 300gb drive that came with the machine and a separate 500gb drive. The 300gb drive is my OS X start-up drive. I'd prefer that to remain a dedicated OS X drive - startup, Mac applications, etc. Can I use the other drive as the Windows start-up drive?
