This can be done but there are some problems
1) The Bios does not support large drives. I am not that familiar with the G3 but I know the early G4's will only support drives up to 132GB internally. So you would have to have an external firewire enclosure for your large drive.

2) I think the B&W G3 was only supported by the first version of OSX so you would likely have some issues connecting to it from newer machines.

I have done this with a 450 Mhz G4 which supports Panther 10.3 and used an external large firewire drive and it works OK

Early G4:s supported HD's up to 128Gb. I'm not sure about G3's either, possibly same limit applies there as well.
