I've created a guide for Wii controllers, which seem to be the most natural to use on Mac because of the Bluetooth. http://fretsonfire.wikidot.com/using-wii-controllers-on-mac-fof XBox 360 and PS3 controllers should also work, but may require more steps. (For XBox HID joystick support - http://www.macupdate.com/info.php/id/11826)
