Hi I have some photos on my iCloud photo stream and noticed that you can share photos with others using iCloud, does this mean my contacts can see my iCloud photo stream?

Not unless you have chosen to share all your photos. If you have chosen to share individual photos with someone, they cannot see all your photos.
