I bought mine from the retail store under someone else's HE discount but the applecare would have to go under the purchasers detail. So best to buy them separately.

No, the price is exactly the same with either method.

You can still use the student discount to purchase the AppleCare, just do so on a different ticket to avoid the issue of auto-enrollment.
