I have negligible experience with Macs.

Can I use a mac to copy files to a flash drive and then use a pc to copy the files on that flash drive to a second flash drive without changing anything about the files? Will I then be able to connect that second flash drive back to the mac with it being able to read/use/copy the files without a problem?

Yes, just make sure the Flash drive is formatted as FAT32 or exFAT, to keep things simple.

+1 and use exFAT if you have large (>4gb) files as FAT32 can't handle single files 4gb or larger.

Also, it should be noted that the file date on the copied files will be different since they are new technically new files.
