So, say I have a theme and I want to change an app icon (it came with a few choices for some apps). I was told to Cyberduck, but I'm still kinda lost. Can someone give me a step by step on what exactly I need to do? Thank you!

I suggest you Google for a tutorial or YouTube video. There are plenty of each already available for you to check out.
 
1. Download openssh via cydia
2. Download and install cyberduck(google it)
3. Enable openssh on Iphone and open cyberduck
4. In cyberduck go to "open connection" and in the menus select SFTP
5. For the server enter your iphone's ip address found in settings/network/ip
6. Enter ip address for user name as well and password is "alpine" as default.
7. Hit connect and voila!
