Just curious, the monitor is really beautiful and the only one of its kind.

If I get the latest MacBook Pro (2019), can it be hooked up to this monitor?

Found in the notes for the Apple Pro Display XDR:
For Mac models with Thunderbolt 3 driving Pro Display XDR at 5K resolution, USB-C ports have USB 3.1 Gen 1 data transfer speeds.
The only guarantee so far is that you'd be able to run it at a maximum of 5K resolution, 6K being reserved for the Mac Pro (2019) and the following generations. Only official testing would show otherwise.
 
If you can afford the Apple 6k monitor, then you can afford the new Mac Pro to run it... ;)
