Can we control what icons show up on the watch on an app by app basis? (I don't have mine yet.) At first I was excited at all my app updates that were adding watch support, but for a lot of them now I just think, "Ugh, really?" Some of them have no use for me on my wrist whatsoever, and I hope I don't have to clutter the icon cloud unnecessarily.

Yes you can uninstall the apps you don't want on the watch. Under the watch app you would select the app you want removed and slide the button to off where it says "show on apple watch"

The only ones you cannot hide are the Apple native ones, like stopwatch, world clock, weather, etc.

Sadly, this includes Stocks....

Omg AGAIN with the stocks app. I don't mind most of the stock apps, but the stocks app has bugged me since my first iPod Touch. At least I don't have to have all 12 of my weather apps have their own watch icon.

Stocks also make their way into the watch faces, in the list of customisations.
