I have a mac given by work that stays at work and my own mac I use at home and stays at home. Both are synced by my one iCloud account. Can work IT guys see my safari browser history from the mac I used at home?

If they are both signed into the same iCloud account then yes (assuming the work Mac is set to sync Safari in iCloud), and assuming the work IT guys have access to your account on the work Mac?

If you don't want this then uncheck Safari in the iCloud settings of the Mac at home (you could uncheck the work one, but the IT staff could recheck it in the settings..). If you use any other devices synced to the one at home then they won't see Safari data either.
