Can you add more Photo Albums other then the Cameral Roll and Photo Library

Yes.
I have only tried one method but it worked so:
Create a folder on the computer with subfolders. into each folder I copied in the various pics I wanted in that folder.
Then in iTunes I browsed for that folder and then set it up as a sync folder.

yep, the only method I know of is to make folders in iPhoto when you sync
