If I exchange my touch, and I want to save all my wireless settings and such for the new one, is that possible? Thanks!

The factory settings of iPod touch is designed to auto connect with your Router's wi-fi connection. If let's say, you setup a static connection like I do, you will have to reconfigure your touch wi-fi network again.

Not if your SSID broadcast is off, and you are password protected ;)
