There are no Apple Stores within two or three hundred miles and I'm starting to come down with a sore throat so I'm not app for any long driving trips.

I'm planning to buy an iPhone and unlock with ZiPhone for use on T-Mobile. I assume Best Buy doesn't sell iPhones, so the only store I can think of that would carry them is the AT&T store.

Can I buy an iPhone from a Cingular/AT&T store and leave without a contract, or will I have to order an iPhone from Apple?

you can go to the store, and buy an iPhone and walk right out.
iPhones are to be activated at home through itunes.
 
They will want to pre-qualify you for service if you purchase at the AT&T store... its not a requirment. To save yourself some time- just tell them its a gift for someone else.
