Can you connect any kind of mouse or keyboard?

I'd like to use a different mouse (MS Intellimouse) for gaming purposes... is this possible on a Mac Pro? Does the same apply to keyboards or other hardware? Thanks.

As long as they are USB and not PS/2.

Yep. You may lose functionality of additional buttons, or may have to remap their functions, but in general, USB keyboard/mice play well with OS X.
