Was thinking to get 3 of these and use them for intercom and music. But Mrs's phone would also need to control them. How does that work, is it messy?

Oh no!

Yes, you can certainly do this.

Take a look at Apple's information regarding the Home app and various functions that can be controlled, for example:

Thanks for linking to the page I posted earlier. Wasn't aware my link was busted. I have corrected the error.

Thanks Phil, I was confused because a Youtuber doing a review said you 'can't use two HomePod Minis' as output source. Which struck me as odd, but I guess they still all connect anyway through the HomeKit network if I'm understanding right now?

The paired stereo HomePods will be selectable as an AirPlay 2 output source, so for the apps and programs that use AirPlay 2, they will be selectable in that way.

Regular audio output for an iMac or laptop, on the other hand, will still see the two HomePods as separate and not the stereo pair.

It is an ongoing issue with HomePods and AirPlay that has been present since HomePods and stereo pairing was first introduced. I'm sure there is a thread on the topic in here somewhere, that will go into this in more detail.
