If you have Apple Music can you sync playlists and songs to your Apple Watch and go running (with say some wireless headphones) without needing your phone? Specifically asking about Apple Watch Series 2.

not familiar with how Apple Music works, but so long as the music is physically synced to the watch and not streaming, it can be done.
 
You should be able to as long as you download the playlist to your phone and then sync it to the watch
 
Yes, you can sync up to 2 GB (1 GB by default) of music onto your Apple Watch using your iPhone Apple Watch App by syncing a playlist. It's done via bluetooth, so it does take a little while to fully sync the contents depending on how many songs you choose to sync.

You can playback the music using bluetooth headphones without the need of the iPhone, however you cannot play back the music through the Apple Watch's speaker.
