I get these updates every week but only show one week. Can i not see data for prior weeks to compare them?
It would be nicer to view it on the phone. not sure if its possible?

The Health and Fitness apps has much to be desired and hope Apple does some updating soon. They need to give us graphs and more reports. They should see how FitBit handles in their app.
 
Is there a way to use another app to transfer the data to see it?
 
Install "Stepz" on your iPhone and under Settings in the app select iPhone & Apple Watch as the Data Source.
From now on Stepz will take all the data and display it in a number of ways and graphs.
It's the best I have found.

I used to use "Pacer" for this but the app does not read data from either the watch nor the iPhone, it simply collects its own data ~ which is no good if you don't have your phone with you and rely solely on the watch for data.

Just tried stepz and the data is different from what's in the watch app for steps and miles. Nice looking all but don't understand the difference in numbers.

after you install and open the app on your iphone, open the app on your apple watch. then go back to the app on your iphone and now you can select both your iphone and the aw as sources for the data.
 
The health app built into your iPhone has heartbeat, steps, distance, etc all automatically synced from your watch. If you add the stat required to the dashboard of the health app you can see Day, Week, Month & Year along with daily averages and things like that.

No need for a new app.

This is what I use, and it's worked very well so far (about a week).

Trouble with this though is although the graph shows you what you have achieved it only does it either by a line graph or by Show All Data.
Neither show you the 'exact' amounts in any given day/week/month.
The graph shows a 'rough' amount in that you can not pull up the total amount you achieved on any given date/week/etc. whilst the Show All Data shows it by the minute, not day or week or month.

Basically Show All Data needs a massive overhaul. It needs tabs where you can select the data in either a Daily/Weekly/MonthlyYearly/All.
 
If you have used a better am like Fitbit, you will realize that the Apple Fitness app is lacking and can use some help. Apple is touting this as a fitness device and a little more work on the app will get it closer.
