Can you password protect a project/folder within Aperture?

Aperture does not have any support for password protecting anything. Your best option would be to create a new library (Aperture 3 makes it easy to switch libraries) within an encrypted disk image. Only mount the dmg when you are using it and ensure you unmount it when done. That way your "sensitive" images will be safe.
