FINALLY got my 16" in today. I was prepping a USB stick to downgrade it to Mojave, because Catalina is not compatible with a lot of Logic Pro plugins. I just googled to make sure there was nothing specific to know, and I'm seeing a ton of threads about how you can't downgrade the laptop because it won't have the proper drives on Mojave... is that true???

True.

The new graphics chips only have support in 10.5.1. (Google "Navi support MacOS")

What Logic Pro plug-ins aren’t compatible still with Catalina? I’ve been getting notices from Native Instruments, Arturia, Waves, Reason, etc that they’re all now finally Catalina compatible.

There’s a number of plugins on a recent list that says they are incompatible. I haven’t tried installing yet. But more importantly, my Apogee Symphony Thunderbridge isn’t compatible.

Gotcha. On the software side, I’d definitely check with the actual manufacturers. Some of those Catalina lists like the one Sweetwater has don’t seem to be getting updated regularly

I see what you mean about the Thunderbridge. It sort of sounds like you’ll need to stick to older Macs capable of running earlier macOS versions if you need to use it

OP:

If you need a computer that runs Mojave -- so it will be COMPATIBLE with the software/hardware you depend on -- then the only logical choice is to RETURN the MBP 16" and get a Mac that is "known to work" (i.e., still runs Mojave) with the stuff you have.

It's really that simple.

I'd suggest either a 2019 iMac or a 2018 Mini.
