the patcher tells the logic board innards to LET ME IN!
without that, the MacBook, Mini iMac will only upload what  deems upgradable.

I have used Dosdudes' patcher since 2019 with no problem, and OCLP on my MBPro for over a year.
all that the patcher does is tell your Mac that it is okay to install Monterey, Mojave etc.
there are no security holes and is a strong as the OS you are still using from .

hope this helped!

It is more than this. The patchers modify the startup including loading/modifying software in the kernel. And ,in most cases modifies SIP. So it does inherently reduce your security and, of course, you need to trust the developers.
Is the patcher safe for unsupported mac?
"Safe"? As above.
Most likely "unsafe" thing is that something is not quite right and the system is unstable. This varies by hardware. Be prepared to go back to older supported macOS.
Can you Update MacOS on unsupported Mac without patcher?
No.
