I would like to cancel my data plan before I get charged another month automatically. If I can cancel now though does my data just shut off right after? Or can I keep using through the month?

I have done this and you can continue to use it until the 30 days are up.

I'm also thinking about swapping my iPad out for a Verizon version (no LTE in my area on AT&T). If I kept the sim card do you think I still use the rest of the month on AT&T?

I don't think you can return/swap the iPad without the SIM card.

If I know I am going to use the cellular for a limited time, like a week, I will sign up and the cancel right after so you do not have to worry about forgetting and having another month added. At the minimum, you better set an alarm but my method is foolproof.

You can get iPhone/iPad micro SIM cards on eBay in quanity for about a buck a piece. Last time I purchased them I got 20 for like 24 bucks.
