When I try to add a Gmail account to the Internet Accounts panel in System Preferences in Apple Mac OS X Yosemite 10.10.3 I am presented with an error that simply says:

There was a problem setting up the Mail account.
Mail couldn't discover the account settings for the Mail server "........".

I've replaced the server name here for privacy, but it's clearly not gmail.com (it's an enterprise Gmail account).

Does anyone know how this can be corrected?

Apple is implementing some changes explicitly related to Gmail: OS X 10.10.3 Beta Adds Support for Google 2-Step Verification on Internet Accounts. It could be that this is causing your issue and may not be resolved until a future beta release or a change in Gmail’s back-end.
