Cannot highlight text or remove highlight in mail app?

I was on an email thread where I was asked to highlight some selections from a list.

I couldn’t figure out how to do it in Mail.app. I copied the text into Pages and I couldn’t figure it out there either.

The color picker apparently lets you changes the entire page background color and lets you change the text color, but there appears to be no way to set the highlight. In either app I can at least remove the highlight by clearing the style (although this removes all style attributes, so not exactly what I want).

Is it possible that I cannot highlight text on my default Mac apps?

I usually just make the text red rather than doing a highlight.
Pages does do it – it’s in the cog dropdown along from the bold/italic etc. buttons.
