I have the M2 Mac Mini and a 2018 first generation iPad Pro 11" so when I try to scan a document in the Mac by opening and using my iPad Pro Camera, it is not available for scan. That option is greyed out in the Mac to scan.

Any idea why so ? And what can I do to enable it ?

I don't use Continuity features, but the support article suggests you can
"Use Continuity Camera to scan or take a picture in these built-in apps:
Finder
Keynote 8.2 or later
Mail
Messages
Notes
Numbers 5.2 or later
Pages 7.2 or later
TextEdit"
Continuity Camera: Use your iPhone or iPad to scan documents or take a picture on your Mac
