When I try to update I get a little window saying "Connecting to the iPhone software update server" and the candy cane bar just keeps going. Has any one else had this problem?

Servers are still busy or your being blocked in some way. Easiest way is to download it from a mirror and update manually

And How do I do that? I just bought the iPhone 4S today. Would that make a difference?
 
Okay. It seems to be loading through wi-fi. Why can't I update through my Mac. That's weird. I don't have iCloud nor do I care for it.

Edit: Software update failed through wi-fi on my iPhone. So neither through my Mac or my iPhone can I get the update.

Just keep trying. It's probably just the servers that's causing it.

I had the exact same problem with my iPhone 4S on ATT. I tried over the course of five days to update via iTunes and over the air with no success.

I made an appointment last Sunday at my local Apple Store and they tried a DFU restore and that seemed to fix the problem.
 
DNS issues

I had the same problem, but thanks to help from this forum I resolved it by setting my DNS to 8.8.8.8 (GoogleDNS) - try that
