UPDATE - Canon released an updated driver the day after Lion was released. Add printer via system preferences then install the Scanner Driver from the Canon website. Then, go back to system preferences to add another device, and the scanner will appear.

Alas, the update doesn't work for me.

UPDATE: It appears there is something buggered about my MacBook Pro. I went to my wife's MBP, opened the system preferences Print & Scan pane, and added the Canon... with no trouble. The scanner shows up in the Scan tab. On my machine, there's no scan tab. How very odd.

UPDATE: Fixed the issue! Given the prevalence of problems with scanners in Lion, I made a separate thread: Success! Fixed my HP and Canon scanner problems under Lion
