Hello. I had a heck of a time
Trying to to set up my pixma mg3620 to my new 2020 iMac. Couldn’t do it wirelessly so I went usb. Can someone tell me if I should have both of these showing up? They are both different. Not sure if I did something twice. Thanks.

One of them is using the AirPrint diver, one the "Canon" driver.

The AirPrint driver will generally have less features, but is built in to macOS, and essentially guaranteed to be supported in future macOS versions.

So for now, you could remove the AirPrint version.

Yes, because it has less features exposed.

In some future macOS version you may find there is no Canon driver (they occasionally remove old ones) at which point you could use the AirPrint driver if necessary, to keep the basic functionality.
