Got a 6 Plus recently after being on Android for a while. When I last used/saw an iPhone, I thought I remembered a "new list" option in the Reminders app but I'm not seeing that in iOS 8. The default "Reminders" list is there, but I don't see how to create a new list.

What am I missing here?

back on the home reminders screen where the other lists are located. up top right there should be a + to add a new list. Also on that page where all your lists are there should be a item to "new list +" You may need to flip up from the bottom to see the "home" list screen.
 
Tap on the word "Reminders"

That'll drop down & popup a "New List" bar... Tap on the '+'
