I am trying to create a simple effect on a short clip in iMovie, to change the contrast and brightness. I select the clip, go to the contrast/brightness effect, select the brightness and contrast I want, look at it in Preview, then click Apply. But when I play it back, the image goes black, and the sound is gone, with no ability to adjust them. I undo the effect and try another one, and the same thing happens. What gives?

Are you giving it time to render? Bear in mind that your Mac has to apply that effect to each frame of your clip which can take a while. There's a small grey progress bar that appears at the bottom of the clip in the timeline when it starts rendering. This will turn red as it renders. You'll only see the final effect when it's finished - before that it will just show black.
