Can't keep emails on server iPhone SE iOS 11

I've tried to find an answer to my issue but with no such luck.

How can I make it so when I read an email on my device and delete it it stays on the server.

I was able to do this until I got my iPhone SE and upgraded to iOS 11.

Can anyone help me here please?
