Decided I would like 128GB instead of the 64GB I ordered and when I log on to make changes, it says to try again in a few hours. Right now, I could still get the 128GB by next Friday but I'm betting in a couple of hours that date might get pushed back.

The only options you have to change include cancel, which is your most likely bet.

Place an order for the one you want and cancel the original order later.
 
ct2k7 is correct. You can't easily "change the order". You have to rebuy the correct one, then cancel the wrong order.
 
I tried to reorder but it recognized I already placed an order tied to my number/trade-in and tells me to cancel that order first. I know if I do that, it will get hung up in the system and I probably wont be able to order a new phone until I get through to customer service and have them straighten things out...
 
I ordered a case that I changed my mind on the color. It went directly from wait a few hours to cancel to preparing to ship and can't be cancelled.

Same thing happened to me and impossible to get anyone at 1800MY APPLE

You won't be able to cancel it, you'll have to refuse delivery or accept and return it.
The worst part is that it's being sent to my old address and the new owner there is a bit of a jerk and has previously claimed that they didn't get the item. There's no signature required as this is the case/magsafe and not phone order. This is stupid. The website won't let you cancel, and then goes straight to shipping?!

I'd call Apple ASAP.
 
Yay for Apple. Finally got on phone with them after 6 tries. For the OP keep trying
 
You're right, once says prepare to ship, they can't stop it in the system. What they did is put a "return to sender" hold on the tracking number with fedex, so the order will go back to Apple. I won't be refunded until that happens though. At least I was able to put another order through. Keep in mind this was magsafe and case and not the iphone 12 pro

Does it really matter if you don't get the phone on the first day? I've received EVERY iphone since the 3G on the first day and other than bragging right, why is it a big deal? I'm passing for the first time on preorder and probably will pick up one in the next 30 days or so. Hey, I might even get one that is not as buggy if Apple upgrades the software.
 
Hours later I checked my order status again and I had the option to cancel, I was hesitant to cancel as in years past that would never update to my account and it would prevent me from placing another order; however, I decided oh well and cancelled on line and it took 10 minutes for my account to update and I was able to order the 128GB version I wanted, still with an October 23 delivery.

From what I can see, the 12 is still available for delivery or pickup next Friday.
