Can't remove music from shuffle.

Seemingly simple problem. Say I have a song or an album that's on my phone and I don't want it as part of my whole library shuffle.

I thought I did everything right. Went into iTunes, right-clicked on it, went to "more info", then "options", then checked the box that says "Exclude from shuffle", or something to that effect...

And it still turns up. Suggestions? Insights?
