Over the last few years I've joined a bunch of wireless networks in hotels and other places. I want to remove all these old obsolete networks so that my Mac doesn't keep trying to join them, but every time I remove a bunch of them from Preferences > Network > Advanced, they seem to keep on coming back.

I'd like to get rid of them - any ideas how I could achieve this?

It sounds like you have iCloud Keychain sync turned on. This causes those networks to get synced and keep coming back. There are some work arounds I have seen to fix it like here, but it seems to be an ongoing problem for people.
