can't see a boot screen on Mac Pro 5.1 workarounds

I can't see a boot screen on my Mac Pro 5.1 even when pressing option key. what would be a good work around? I am running a dos dude Catalina patch and would like to update to Monterey with the open core patcher. Could anyone help me with this. I'm afraid to force a rollback to Mojave or to attempt an open core patch in case I get stuck in a black screen mode during the process.
