I Need a Drink

I just cloned my HDD to a new Samsung T5 that I got today. I used Disk Utility to format the SSD as APFS GUID since I've already upgraded to Mojave. I then used Carbon Copy Cloner to clone the HDD to the SSD and tried to reboot. When I hold the Option Key, I get to the startup selection, but I cannot see the SSD, only the internal HDD. I've cleared the NVRAM and that didn't work either. I can see the drive if I go to System Preferences -> Startup and I can select the drive, but, I want to make sure everything boots before I change the default startup disk. Like I said, if I hold the Option Key down, I can only see my HDD and I've tried several times. Any ideas or help?
 
Just another update. I went ahead and set the SSD as the boot drive in System Preferences and it booted just fine. I still would like to know why it isn't showing when I hold the Option key if anyone might have an idea.

Also, I don't think Carbon Copy Cloner made a recovery partition, but I still have one on the internal HDD. When 10.14.1 comes out and I update, won't macOS automatically notice that I don't have one on the SSD and create it then?
