Can I capture by setting an in and out point, but not watching the video in between? In other words, if I know my in is at 5 minutes and out is at 10 minutes, can I just enter those to log and capture, and then capture the footage later? Or do I have to set the out point while watching...

In other words, I want to watch a tape, set an in point, then I want to fast forward the tape to an arbitrary out point, and then capture later. The fast forward part is key, so I can capture while I am doing something else.

Can this be done in FCE or FCP or both? I need to be able to fast forward after the in point, until I identify the out point.

Yes you can...

You can "log" the clip by entering your in and out, then log it...it will appear in your project window with a red line through it. Once you log the entire tape, select the clips (with the red line through it) and then batch capture...
Log clip is bottom right 4 buttons from the right...hope this helps...
