Capturing text from Preview (e.g., PDF)

How does one capture text from a Preview file, such as a PDF file, for pasting into another application like Word? Simply selecting it does not work.

selecting text in a pdf and pasting into word works for me

not sure if you are trying to do something a little different to this, but yeah, it works on my end.

It's easier to do this using adobe reader. I sometimes have issues getting preview to select text. Never a problem with adobe. I generally use preview to look at documents, but reader if I need to do anything with them.
