Just noticed a 'Carrier' option in 'Settings' which has the following options:

Automatic

O2 - UK
Orange
T-Mobile UK
vodaphone UK

When you replace the O2 SIM with another, this option disappears…odd.
 
It's basically due to Roaming. When you go abroad you can use that menu to pick and choose what network you attach yourself to. For example if you are in spain and a network comes up but you want to attach to Telefonica (o2) you navigate to that menu and see if it is available.

Basically its only ever usefull if your carrier offers cheaper calls with their carrier when abroad (if you're ever in a country and you're on Three, and that country has Three, they let you use your free minutes and texts in that country)
