Hi, today while driving a round the state I had very little coverage. On my iPhone, a tab called carrier appeared and when I clicked on it it said automatic. We are on att. What does this do?

Yeah, basically

One of the first tabs you see is also supposed to be "Carrier", which allows you to select from local available networks if AT&T isn't available. Select a permanent connection through the Carrier tab, so that I can have a stable connection while near the border.

Must be roaming, you can turn off roaming. It's not really specific to a plan.
