I haven't played castlevania since I played it on GBA. Obviously, the series has grown much since then. Which one should I pick up with? I have most of the consoles since then, but I'm just not sure which game to play.
Well I personally didn't like the new Lords of Shadow games, they aren't similar to the ones that IGA produced for GBA and DS. But speaking of those games, all three Castlevania games for DS are pretty good and are similar metroidvania-type games.

Just like what Miharu said: go for the DS ones next. They feel like real sequels to the GBA titles.
I've got the 3DS one (forgot the name) and it's kinda underwhelming. I don't think we'll see another Castlevania game as good as Ecclesia, Symphony or Aria & Dawn of Sorrow.

My order of favouriteness from best to least best:
Order of Ecclesia
Dawn of Sorrow
Symphony of the Night (if you have a PSP or Vita you can play it on that too)
Aria of Sorrow
Portrait of Ruin
Circle of the Moon
